Peanut Butter Pudding

Need I say anymore…I love peanut butter.  So, for a sweet semi low-calorie snack, I have been buying sugar-free and fat-free vanilla pudding.  I make it according to the directions and then add about 3/4 cups of creamy peanut butter.  I just mix that in after mixing the milk and pudding for 2 minutes.  Then, let it set for 5 minutes and you have rich and creamy yummy peanut butter pudding.  I then add a spoonful of fat-free or lite cool-whip to the individual bowls and shabam…yummy, semi-low calorie, sweet snack.  And….bonus, Ben loves it too.  If you don’t have time to make up some cookies and are craving something sweet, this hits the spot and gives you protein.  I am not sure that my nutritionist friend would totally approve, but the men in my house do.  And…I LOVE IT!

    my mother in law makes chocolate pudding (the cook kind) and puts dollop of peanut beutter in bottom of dish first and then adds pudding…pretty yummy
